Healthy Lemon Slice

Ingredients
1 cup desiccated coconut
1 cup ground almonds

1/2 cup rolled oats
4 Tbsp extra virgin coconut oil
4 Tbsp honey
Zest of one lemon
Juice of one lemon
1 tsp pure vanilla bean paste
A pinch of sea salt

Method
1.
 Add all of the ingredients to a food processor. 

2. Pulse 3-4 times, or until the mixture starts to come together like a dough.

Press into a lined baking dish & refrigerate for at least 1 hour before slicing.
